Main duties of the job

At Avery Healthcare, we're seeking a Sous Chef - Bank for Purley Gardens Care Home in Purley. The role requires supporting the head chef in leading the culinary team to provide a high-quality culinary service within budget. Responsibilities include: preparing modified diets according to IDDSI guidelines, supervising culinary staff as directed by the Head Chef, understanding safe food handling principles, and supporting teams with the Avery Food safety management system. The ideal candidate must possess a relevant catering qualification, at least 1 year of catering experience, and demonstrate compassion and adaptability. Working hours are from 07.00 am to 15.00 pm, and 12.00 pm to 19.30 pm. Your focus asSous Chefwill be tosupportthe head chef in leading a culinary team that provides a nutritionally balanced, comprehensive,and high-quality culinary service, which contributes to the overall well-being of the residents and is achieved withinbudget.

Other responsibilitieswillinclude:

• Preparing modified diets that look appealing and are well-balanced and in accordance with IDDSI guidance.
• Supervising and directing the work of culinary staff, as directed by the Head Chef, providing instruction and demonstration to unqualified staff on simple food preparation activities.
• Understandingthe principles of safe food handling to ensure that all food preparation undertaken in the kitchen meets the highest hygiene standards.
• Supportingall culinary team members in fullyunderstandingthe Avery Food safety management system.

• Holdarelevant catering qualification City & Guilds 706/1 and 706/2 or NVQ or equivalent.

• Be able to be adaptive and flexible to cover a range of responsibilities at short notice.
